Practical steps

1. Prepare ingredients: wash and cut tomatoes; Wash and tear small pieces of enoki mushrooms; Wash and cut cabbage (you can also choose according to yourself, such as lettuce, greens, etc.); Wash and cut the tofu skin; Rinse the bean sprouts well.

2. Cut green onion, ginger and garlic for later use

3. Boil oil

4. Heat the oil, add green onion, ginger and garlic and stir-fry

5. Add three spoonfuls of bean paste and stir-fry until fragrant

6. Add the tomatoes

7. Add four spoonfuls of sugar

8. Four teaspoons of salt

9. Stir-fry the soup (this step is very key, be sure to fry until the tomatoes are soft and juice comes out)

10. Add cabbage and stir-fry (I prefer cabbage, but it can also be other vegetables)

11. Add bean sprouts and stir-fry (it must be a soybean sprout with a large head and a small tail, so that it is fragrant)

12: Add three spoons of light soy sauce

13: Stir-fry a spoonful of oyster sauce evenly

14. Add boiling water (I boiled it when I first started stir-frying, which can save a lot of time)

15. After boiling water, add enoki mushrooms

16: Add tofu skin

17. Put in the knife to cut the surface

18. Add pepper (you can also add chicken essence for a more delicious taste, because I don’t love the taste of chicken essence, so I didn’t add it)

19. Wait for the noodles to be cooked and then come out of the pot

20. Dangdangdang, the delicious eggplant sauce noodles are ready, you can also try it

Tips

(1) The tomato must be fried thick before putting other things (2) I make it for four people, and the seasoning can be increased or decreased according to personal taste (3) You can also put some fat beef rolls, meatballs and other vegetables, which are also delicious and can be adjusted according to personal taste (4) The key to this meal is sugar, and you must not put less
